banana bourbon bread pudding

Rich, gooey and a little bit boozy.

Ingredients:

  • For the Bread Pudding
  • 6 cups day-old bread (French bread or brioche, cubed)

  • 3 ripe bananas, mashed or sliced

  • 4 large eggs

  • 2 cups whole milk (or almond milk for dairy-free)

  • 1 cup heavy cream (optional for richness, or use more milk)

  • 3/4 cup granulated sugar

  • 1/4 cup brown sugar

  • 1/4 cup bourbon

  • 2 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • 1/4 tsp nutmeg (optional)

  • Pinch of salt

Bourbon Sauce
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream
  • 2-3 tbsp bourbon
  • 1 tsp vanilla extract

Preparation:

Prepare the Bread and Bananas
  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.
  • Spread the bread cubes evenly in the dish.
  • Mix in mashed or sliced bananas.
Make the Custard
  • In a large bowl, whisk eggs, milk, heavy cream, granulated sugar, brown sugar, bourbon, vanilla, cinnamon, nutmeg, and salt until well combined.
Combine and Soak
  • Pour the custard mixture evenly over the bread and bananas.
  • Gently press the bread down to ensure it soaks up the liquid.
  • Let it sit for 15-20 minutes to absorb the custard.

Bake

  • Cover with foil and bake for 30 minutes
  • Remove foil and bake an additional 15-20 minutes, or until the top is golden and the pudding is set (a knife inserted in the center should come out clean)
Make the Bourbon Sauce
  • While the pudding bakes, melt butter in a saucepan over medium heat.
  • Add brown sugar and stir until dissolved. Stir in heavy cream, bourbon, and vanilla.
  • Cook for 1-2 minutes, until smooth and slightly thickened.
Serve
  • Drizzle the warm bourbon sauce over the bread pudding and serve immediately.
  • Add whipped cream or a scoop of vanilla ice cream for extra indulgence.
